Dandelion
Where found: Throughout Asia, Europe, and North America
Availability: Spring, Summer, Fall
Use: Add the young, tender leaves to salad raw, or boil and eat as greens. The roots can be roasted and ground, and used as a coffee substitute. The yellow rays of the flowers are sweet and make a great snack raw, or they can by fried as fritters. The unpoened buds are also excellent and can be used the same way as the leaves.
